I have always try to eat as healthy and balance as possible but that doesn’t mean I don’t enjoy sweets, chocolates and Ice cream.  I am a firm believer that as long as you keep a good balance you can really enjoy anything.  So when it comes to “healthy snacks” I try to mix different flavors, as many as possible so I can satisfy my sweet tooth.  

One day I was at my friends house and she offered me some “Healthy Granola” at first as I was very hesitant to even try it because what I was really looking to eat was something sweet and did not think this was going to be it.  Little did I know this granola was delicious with a perfect blend of flavors.

First of all, I have tried lots of granolas and have made many different recipes. I feel if you find the one that you really like it is a perfect and delicious snack specially when you mix it with some yogurt (my favorite is greek vanilla) Ice Cream or just eating it by itself.  Finding the right one is very tricky, you can find them in every single grocery store but many can be loaded with tons of sugar and if you are looking for something healthy sometimes finding the perfect one, the one that has the flavor you want can be very difficult.

When I tried this granola, the one my friend offered me I was in shock! It was delicious and the ingredients perfect!  Not too soft not too hard, the sweetness and the salty flavors mixed perfectly, I knew my husband and kids would love it so I didn’t hesitate to ask for the recipe and could not wait for my family to try it.

So here is the recipe:

1/2 cup Macadamia Raw nuts

2 1/2 Old fashion Oat Meal

1/2 cup Peanuts (unsalted)

1/2 cup Honey

1 cup Coconut Flakes Unsweetened

1 cup Raisins

1/2 cup Slivered almonds

1 Tablespoon Coconut Oil (melted)

1 Tablespoon Vanilla extract

You can also add 1/2 cup of sunflower seeds

  1. You need to preheat Oven at 270, Line a sheet pan with parchment and set aside.
  2. In a large mixing bowl, mix together the Macadamia Nuts, the Oatmeal, peanuts and raisings.
  3. Then add to the mix the rest of the ingredients making sure all ingredients are well coated.
  4. Spread mixture onto the prepare sheet pan.
  5. Bake in preheated pan for 70 minutes (yes I know 70 minutes!!) trust me you don’t want to burn it by getting the oven at at higher temperature.
  6. Remove from oven and let it cool completely.
  7. Use a spatula to get out of pan.
  8. Store in airtight container.

I do hope you enjoy this recipe as much as we do in our house as I say it is delicious and nowdays every time I make it I doubled the ingredients so we have enough to last few days.!!
